Peach Pit Jelly




Ingredients

Peach pits

1 pkg Pectin

1/4 cup Lemon Juice

5 cups Sugar - premeasured


Description

1. Place pits in a pan and cover with cold water.

2. Bring just to boil.

3. Remove from heat and strain liquid.

4. Reserve 3-cups liquid. If a little short, add water to 3-cups. If a little long, toss the rest. If way long, add water to get to 6-cups and make two separate batches.

5. Add lemon juice.

6. Put in deep sauce pan, stir in pectin and stirring continuously, bring to full rolling boil.

7. Quickly add all the sugar and stir continuously until it comes back to full rolling boil.

8. Boil 2-minutes.

9. Place in jars (1/2 pint), put on
lids and rings and boil in water bath for 10-mintes.
